Warm up with a vibrant, Indian-inspired soup that combines the earthy sweetness of beetroot with the zing of fresh ginger and lemongrass. This Brilliant Beetroot & Ginger Soup is packed with bold flavours and the perfect winter comfort!
INGREDIENTS:

300g pack cooked beetroot, drained and coarsely chopped

1 tbsp finely chopped lemongrass heart

2 curry leaves

5cm piece/approx. 40g fresh ginger, peeled and chopped

100ml cream single cream
-
1 tsp ground cumin
- 1/8 tsp cayenne pepper
- Salt, black pepper to taste
- Handful coriander, chopped
METHOD:

Add the Cawston Press Brilliant Beetroot pressed juice, beetroot, lemongrass and ginger into a pan, bring to the boil and simmer for 30 mins.

Blend until smooth.

Add the cream, cumin, cayenne and black pepper, and salt (TOP TIP: taste to ensure the salt cuts through the sweetness of the beetroot for a perfectly balanced soup).

Stir in the coriander and serve.
