Indian-inspired Brilliant Beetroot & Ginger Soup

Warm up with a vibrant, Indian-inspired soup that combines the earthy sweetness of beetroot with the zing of fresh ginger and lemongrass. This Brilliant Beetroot & Ginger Soup is packed with bold flavours and the perfect winter comfort!

INGREDIENTS:

  • 1L x Cawston Press Brilliant Beetroot

  • 300g pack cooked beetroot, drained and coarsely chopped

  • 1 tbsp finely chopped lemongrass heart

  • 2 curry leaves

  • 5cm piece/approx. 40g fresh ginger, peeled and chopped

  • 100ml cream single cream

  • 1 tsp ground cumin

  • 1/8 tsp cayenne pepper
  • Salt, black pepper to taste
  • Handful coriander, chopped

METHOD:

  1. Add the Cawston Press Brilliant Beetroot pressed juice, beetroot, lemongrass and ginger into a pan, bring to the boil and simmer for 30 mins.

  2. Blend until smooth.

  3. Add the cream, cumin, cayenne and black pepper, and salt (TOP TIP: taste to ensure the salt cuts through the sweetness of the beetroot for a perfectly balanced soup).

  4. Stir in the coriander and serve.
