Our fiery tribute to a timeless classic.

Pour a little apple juice to just cover the finely chopped ginger and blitz for a further minute to get a puree.

Strain through a muslin lined sieve then squeeze out as much juice through the muslin as possible.
3.
Add this to the rest of the litre of apple juice and serve two parts juice to one part sparkling water for a tasty, fresh ginger beer.
Cawston Tip:
If you like even more heat you can add a chilli to the mix when blitzing the ginger.
The amount of ginger you use in this recipe is dependent on how fiery you like your ginger beer. Take approx. 100g (for relatively mild) to 200g (for really rather hot) root ginger and blitz in a blender.
