Elderflower Lemonade
This reminds us of asummer’s walk down a country lane
- 1 litre Cawston Press Cloudy Apple Juice
- 20g Dried Elderflowers
- 2 unwaxed lemons
Method
Elderflower Lemonade

Pop 20g of dried elderflowers and the zest of two unwaxed lemons (a microplane fine grater is good for this) into a saucepan and cover with apple juice (approx. 300ml from a one litre carton).

Bring to the boil, then take off the heat and leave to steep for 30 mins covered.

Strain infused juice through a sieve lined with a muslin, then squeeze out as much juice as you can from the muslin.

Add the remaining apple juice from the carton and the juice of half to one lemon (to taste).

Drink as a juice or serve with sparkling water (two parts juice to one part sparkling water).
Cawston Tip:
Add a drop of gin to this, to make a glorious drink for a summer’s evening.
