Bring on the BBQ!
Mix together the lemon juice, apple juice and olive oil. Stir in lemon zest and crushed garlic to taste. Add plenty of chopped fresh herbs – parsley, coriander and mint or whichever ones you have to hand. Place your meat, prawns or veg in a bowl and pour the marinade over giving it a good mix. Season to taste with the salt and pepper. Marinade for a few hours before cooking.
This also works very well as a dressing for couscous or Bulgar wheat salads
